    ***Crust***
    1 1/4 cups all-purpose flour
    1 teaspoon salt
    1/2 cup shortening
    1 cup shredded lowfat cheddar cheese
    1/4 cup ice water

    ***Topping***
    1/2 cup packed brown sugar
    1/2 cup sugar
    1/3 cup all-purpose flour
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon salt
    1/4 cup nonfat margarine -- softened
    4 medium Granny Smith apples
    2 tablespoons lemon juice

    Recipe



    1. Preheat oven to 375 degrees F.

    2. To prepare crust combine flour with salt in a mixing bowl. Cut in shortening until crumbly. Add cheese. Sprinkle water over mixture gradually. Shape into a ball with lightly floured hands. Roll dough out and place in a pie pan. Pinch sides up approximately 1-inch to form a rim.

    3. Combine sugars, flour, spices, and salt. Sprinkle half of this mixture over pastry. Cut margarine into remaining topping mixture until crumbly.

    4. Peel, core, and slice apples into thin slices. Arrange apple slices, overlapping them on the crust. Sprinkle with lemon juice and remaining topping mixture. Bake 35 - 40 minutes, or until apples are tender. Serve warm.

    Serves 12. Serving Size (1 slice)
