    Chicken: 2 pt. Dijon Grilled Chicken

    3 T Dijon style mustard
    2 tsp fresh lime juice
    1 tsp low-sodium teriyaki sauce
    1 garlic clove, finely minced
    Pinch ground red pepper
    Four 3-ounce skinless boneless chicken breasts

    Recipe



    1. Spray an indoor ridges grill pan with non-stick cooking spray.

    2. In medium bowl, with wire whisk, combine Dijon mustard, lime juice, teriyaki sauce, garlic and ground red pepper. Dip chicken breasts into mixture, one at a time, coating both sides; place on prepared pan(or grill)

    3. Grill chicken, brushing with remaining mustard mixture, 4 minutes on each side, until cooked through and juices run clear when pierced with a fork.

    Makes 4 servings.
    Per serving: 112 calories; 20 g protein; 2 g fat; 2 g carbohydrate; 11 mg calcium; 414 sodium; 49 mg cholesterol; 0 g dietary fiber.
