    List of Ingredients

2 cups cooked chicken -- shredded
    2/3 cup bread crumbs
1 large egg -- lightly beaten
    1 egg white
1 small yellow onion -- minced
1 medium celery stalk -- chopped
    2 tablespoons chili sauce
1 tablespoon pickapepper sauce* (see below)
1 tablespoon hot red pepper sauce
    1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

    Recipe

In a medium bowl, combine chicken, bread crumbs, egg, egg white, onion, celery, chili sauce, pickapepper sauce, red pepper sauce, salt, and pepper. Mix well. Shape chicken mixture into 7 small patties. Place patties on a baking sheet; cover with plastic wrap and chill for 30 minutes. Spray a large skillet with vegetable cooking spray. Cook patties over medium heat, turning once, until golden brown, about 10 minutes. Serve immediately.

Yield: 7 patties, serving size is one patty each.

NOTES : MICROWAVE: If you do not have any leftover cooked chicken on hand, poach some chicken in the microwave. In a microwave-safe casserole, combine 2 boneless chicken breasts (about 1 pound) with 1/2 cup of water or reduced-sodium chicken broth. Cover; microwave on HIGH for about 17 minutes. Let stand for 5 minutes. Proceed as recipe directs.

COOKING TIPS: To shred chicken, start with leftover or freshly cooked chicken that is cooled, skinned, and boned. Using a fork, pull the meat apart into long shreds.

*Pickapepper sauce is a zesty condiment made from pureed red chilies, vinegar, and seasonings. You'll find it in the supermarket condiment section.
