    Chicken: 5 pt. Chinese Style Goulash

    2 Tablespoons margarine
    1 Small onion sliced
    1 Can sliced mushrooms drained
    2 Cups chicken broth
    1 Cup rice uncooked
    2 Cups cooked chicken cubed
    1 Medium green pepper cut into strips
    1/2 Cup celery diced
    1/4 Cup soy milk
    1 Dash salt and pepper

    Recipe

    Melt margarine in large skillet. Cook and stir onion and mushrooms in margarine until onion is tender. Add chicken broth; heat to boiling. Stir in rice. Reduce heat; cover and simmer 10 minutes. Stir in remaining ingredients. Cover; cook 10 to 15 minutes. Serves 6.
