    2 tsp lemon pepper seasoning
    1/3 cup all-purpose flour
    4 small (4 oz) skinless, boneless chicken breasts
    4 scallions, chopped
    juice of 1 lemon
    pinch curry powder
    3 tbsp fat-free Italian dressing
    1 avocado, peeled and diced
    3 plum tomatoes, diced
    7 jumbo pitted black olives, chopped

    Recipe



    1. Preheat the oven to 400¼F (200¼C). Coat a baking dish with cooking spray. 2. Combine the seasoning and flour. Lightly coat the chicken with the cooking spray, and then coat each breast with the flour mixture. Place the chicken in the prepared dish and bake for 20 minutes, or until cooked through. 3. In a bowl, combine the scallions, lemon juice, curry powder, dressing, avocado, tomatoes and olives. 4. Divide the chicken breasts between four plates and top with the avocado salsa.

    TIP! Warmed chicken breasts topped with vegetable salsa give a whole new meaning to grilled chicken salad. Try this concept with a piece of cooked tuna and a fruit based salsa made with mango, papaya, red pepper, red onion and balsamic vinegar.
