    Fish: 5 pt. Broiled Scallop Gratin

    1/3 cup fresh lime juice
    1/4 cup minced fresh parsley
    1/4 cup minced red bell pepper
    1/4 cup minced green onions
    1 1/2 tablespoons Southwestern-style oil with garlic, jalapeno pepper, cilantro, and lime
    1/4 teaspoon salt
    1 1/2 pounds sea scallops
    Cilantro sprigs -- optional

    Recipe



    Combine first 7 ingredients in a bowl; stir well. Divide scallop mixture evenly among 4 gratin dishes. Place dishes on a baking sheet; broil 10 minutes or until scallops are done.

    Serves 4.
