    Fish: 8 pt. Cinnamon Apricot Glazed Salmon

    List of Ingredients

    2TBSP Low sodium soy sauce
    1 TBSP minced peeled ginger fresh ---I used 1/2tsp gound ginger
    2 (3 inch) cinnamon sticks
    1 (12oz) can apricot necter
    4 (6oz.) salmon fillet

    Recipe

    Combine the first 4 ingredients in a sauce pan,and bring to a boil, reduce heat and simmer mixture until reduced to 3/4 cup (about 30 min.) Strain the apricot mixture through a sieve over a bowl and discard solids.

    Preheat broiler place salmon fillets on a broiler pan covered with foil broil 5 minutes brush the fish with the apricot glaze about 1/4 of a cup and continue to broil 3 minutes or until fish is done (flakey) and serve with 2 tbsp of sauce.

    Serves 4.
