    1 medium red sweet pepper, cubed
    2 tsp. minced garlic
    2 green onions, thinly sliced
    1 1/2 cups pea pods
    1/2 cup mushrooms, sliced
    1 cup broccoli
    1 1/2 cups cooked no yolk egg noodles
    2 tsp. sesame oil
    6 oz. firm, low-fat tofu
    nonstick cooking spray

    Sauce
    2 Tbsp. reduced sodium soy sauce
    2 Tbsp. rice wine vinegar
    1 tsp. ginger root, grated
    1 tsp. garlic, minced
    1 tsp. sesame oil

    Recipe



    Mix sauce ingredients together and set aside. Spray a nonstick pan or wok, add 2 tsp. oil, garlic, vegetables and tofu to pan, and stir-fry at medium-high heat for about 5 minutes. Add half of the sauce mixture to the vegetables and mix thoroughly. Cook until the vegetables are tender. Add the noodles and remaining sauce. Continue to cook about 2-3 minutes.

    Makes 5, 1 cup servings.
