    Turkey: 4 pt. Turkey-Bean Enchiladas

    6 scallions, white and light green parts chopped
    2 cups cooked turkey, cubed
    15 oz (420g) can pinto beans, drained and rinsed
    1 cup enchilada or taco sauce
    4 x 99% fat-free burrito-size flour tortillas
    1/2 cup reduced-fat Mexican blend or cheddar cheese, shredded

    Recipe



    1. Preheat oven to 350¡F (175¡C).

    2. Combine scallions, turkey, beans and 1/2 cup of the enchilada sauce.

    3. Fill each tortilla with 1/4 of turkey-bean mixture. Fold in sides and then top and bottom of tortilla to completely enclose filling. Place seam-side down in a 9 x 13-inch (23 x 33 cm) baking dish.

    4. Pour remaining 1/2 cup of enchilada sauce over top of enchiladas and top with cheese. Cover pan and bake until heated through and cheese is hot and bubbly, 20 minutes.
