    1 serving cooking spray (5 one second sprays)
    1 cup buttermilk
    2 large egg(s)
    4 Tbsp unsalted butter, melted and cooled
    1 tsp almond extract
    1/2 cup dark brown sugar
    1 2/3 cup all-purpose flour
    1/2 tsp baking powder
    1 Tbsp baking soda
    1/2 tsp table salt
    1 1/4 cup sour red cherries
    1/4 cup sugar
    2 fl oz liqueur, any type, amaretto

    Preheat oven to 375¡F. Coat 2 muffin tins with cooking spray. In a large bowl, whisk together buttermilk, eggs, butter and almond extract. Whisk in brown sugar. Add flour, baking powder, baking soda and salt; stir to combine. Fold in cherries. (Note: If you canÕt find sour cherries, use frozen ones that have been thawed or canned cherries that you rinse and drain well.)

    Spoon mixture into prepared muffin tins until 18 holes are 3/4 full each. Bake until a toothpick inserted in the center of a muffin comes out clean, about 20 to 22 minutes. Cool in pan on a wire rack.

    Meanwhile, to make glaze, combine sugar and liqueur in a small saucepan over medium heat. Stir constantly until sugar is dissolved. Bring to a boil, reduce heat to low and simmer until a syrup is formed, about 10 minutes. Brush over cooled muffins.
