    4 pt. Greek Salad Pitas

    1 cup cucumber peeled and seeded diced
    1 cup red bell pepper diced
    1 cup green bell pepper diced
    1/2 cup feta cheese - light crumbled
    1/4 cup red onion diced
    1/2 cup pepperocini peppers chopped
    1/4 cup olives (kalamata) pitted & chopped
    2 tablespoons lemon juice
    2 teaspoons dried oregano
    1 teaspoon extra virgin olive oil
    1/4 teaspoon white pepper
    4 pita bread rounds cut in half (6-inch)
    8 lettuce leaves

    Combine first 11 in large bowl; toss gently. Line each pita with a lettuce leaf; fill with 1/2 cup salad mixture. Yield: 4 servings of 2 stuffed pita halves each.
