    List of Ingredients




    cooking spray
    1 cup turkey kielbasa (about 6 oz.), finely chopped
    1/2 cup chopped onion
    1 cup presliced fresh mushrooms
    1/2 cup salsa
    1/4 teaspoon freshly ground black pepper
    3 garlic cloves minced
    1 10 oz. pkg. frozen chopped spinach thawed, drained, and squeezed dry
    1 7 oz. bottle roasted red bell peppers drained and cut, into thin strips
    1 1/2 cups egg beaters (r) 99% egg substitute
    1/2 cup monterey jack cheese shredded (2 oz), reduced fat
    10 8 inch fat-free flour tortillas

    Recipe



    1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add kielbasa and onion; saute 2 minutes. Add mushrooms and next 5 ingredients; saute 2 minutes. Add egg substitute and cheese; cook 10 minutes or until egg sub. is set, stirring occasionally.

    2. Warm tortillas according to package directions. Spoon about 1/2 cup egg mixture down center of each tortilla; roll up.

    Yield: 10 servings.

    Make-Ahead Tip: Fill all tortillas with egg mixture; roll up, and let cool. Wrap cooled sandwiches, individually, in heavy-duty plastic wrap. Store in refrigerator up to 4 days or freeze up to 1 month. Allow frozen sandwiches to thaw overnight in refrigerator. Microwave refrigerated sandwiches, still wrapped, at HIGH for about 45 seconds or until warm, turning once.
