    6 pt. Crunchy Chicken Rollups

    List of Ingredients




    1 lb. boneless, skinless chicken breasts
    1 c. alfalfa sprouts
    1/2 c. sliced water chestnuts
    1/2 c. fat-free creamy Italian dressing
    4 8-inch fat free flour tortillas
    4 green leaf lettuce leaves

    Recipe



    1. Add enough water to a large saucepan or Dutch oven to cover chicken. Bring water to a boil over medium-high heat; reduce heat to low. Add chicken, and simmer 10 minutes or until chicken is done. While chicken cooks, combine water chestnuts, sprouts, and dressing in a bowl.

    2. Remove chicken from Dutch oven; cool slightly and chop, Add chopped chicken to sprout mixture, tossing well.

    3. Wrap tortilla in plastic wrap, and microwave at HIGH 30 seconds or until heated. Place a lettuce leaf on each tortilla; spoon chicken mixture evenly onto each lettuce leaf. Roll up each tortilla, and serve immediately.

    Makes 4.
