    2 pt. Per Cup Spicy Peanut Sauce

    2/3 cup water
    1 TB lite soy sauce
    2 tsp vinegar
    15 Pringles Fat-Free Original Potato Crisps
    1 TB Better 'N Peanut Butter (from Trader Joe's)
    1/4 tsp ground ginger (or a thin slice of fresh ginger root)
    1/2 of a small garlic clove (or 1/8 tsp garlic powder)
    1 slice (1/4-inch thick) ripe banana
    2 individual packets Equal sweetener
    Cayenne pepper, according to how spicy hot you prefer

    Put all of the ingredients (yes, the Pringles too) into a blender and blend on high speed until very, very smooth. This sauce thickens a little more over time. If too thick, thin with water. If too thin, add one or two more pringles fat-free crisps and blend again until very smooth. Refrigerate after using. Keeps about a week in a covered container, refrigerated.

    Yield: one 8-oz. cup of dressing

    Original Poster's Notes:
    This sauce can be served cold or warm on noodles, vegetables, fruit, seafood, grilled meats, etc. If you want to serve it warm, it's best to heat it on the stovetop using low to medium-low heat. Do not boil. It can be microwaved, but the texture changes somewhat, so the stovetop method gives the best result.

    Also, I've only made this recipe with the Pringles fat-free crisps. They contain a fat substitute that gives the sauce a high-fat texture and taste. It may be that the WOW brand chips can be used instead, but I haven't experimented yet with that brand or calculated whether the points are the same per-serving, so I can't say for certain.

    Re the Better 'N Peanut Butter: I've only seen it available at Trader Joe's, though you may be able to find it at other grocery outlets. Per tablespoon, it contains 50 calories and 1.2 grams of fat, much lower in both than regular or low-fat peanut butter.
