    1 Can College Inn Chicken Broth with Roasted Vegetables.
    1/4 cup egg substitute or two egg whites
    1/2 cup canned, shredded bamboo shoots
    1/2 cup shredded celery
    1/4 cup shredded carrot
    1 tablespoon soy sauce, or to taste
    2 teaspoons Sriracha garlic chili pepper sauce to taste (southeast Asian sauce, available in most Oriental sections of the grocery)
    2 teaspoons rice wine vinegar
    1/2 teaspoon roasted sesame seed oil
    1 tablespoon chopped green onion tops.

    Recipe



    Heat the chicken broth to a boil in a small saucepan. Lower heat to medium low and slowly add in the egg product, making sure to stir in one direction until of of the egg product has been added (the soup will have 'strings' of the egg which look a little like noodles). Add shredded bamboo shoots, shredded celery, and shredded carrot, soy sauce, hot sauce and rice vinegar. Cook additionally only long enough to heat vegetables thoroughly. Remove from heat and stir in sesame seed oil. Serve immediately topped with chopped green onion. Makes 2 servings. WW pts. are estimated.


    Special Notes
    The balance of soy sauce, hot sauce, and rice vinegar are the key to a good flavor and the proportions are a matter of individual preference.
    This soup is very quick (15 minutes or so to prepare), tasty, and can be enhanced with your favorite add-ins to make it more of a meal.
    You can add cubed tofu or chicken to make this a main dish soup, but don't forget to add the points.
