    Soup: 1 pt. Mom's Veggie & Barley Soup

    adapted originally from the Garden Vegetable Soup recipe (Debbie Lager)

    List of Ingredients




    1 1/3 cups carrot sliced
    1 1/2 cups broccoli
    3/4 cup cauliflower
    1 cup onion diced
    2 garlic cloves minced
    6 cups broth
    1 cup green beans
    1/2 teaspoon dried basil
    1/4 teaspoon dried oregano
    1/2 teaspoon salt
    1 cup barley

    Recipe



    In a large saucepan, sprayed with Pam, saute carrots, broccoli, cauliflower, onion and garlic until softened. Add broth, beans, spices and barley. Bring to a boil. Lower heat and simmer for about 15 minutes, or until veggies are tender. Serve hot.

    1 point for 3 cups of soup.

    Per serving: 459 cal, fat 2.9 g, protein 17.2 g, carbo 97 g, cholestrol 0, sodium 621 mg, fiber 23.2 g
