    List of Ingredients




    1 28 oz Can Crushed Tomatoes
    1/2 Bag of frozen sliced carrots
    1/2 Bag of frozen yellow squash(or Zuccini)
    1TB Basil
    5 Cubes Bullion
    1 tsp Garlic Powder
    1/2 tsp pepper
    2 TB Parsley
    2 TB Minced dry Onion
    1 28oz can Diced Tomatoes
    1 Package Liptons Vegetible Soup Mix
    1 28 oz Can of water
    1.5 Cups Mixed Vegies (Corn,carrots,etc)

    Optional:
    1/2 Cup frozen chopped spinich
    Shredded Cabbage

    Recipe



    In dutch oven put can of crushed tomatoes all of herbs and boullion cubes and carrots and squash, bring to boil and let simmer about 5 minutes or until squash and carrots are cooked. Take Bruan Blender (the hand blender) and blend carrots and squash into thick soup base (you can use a regualar blender if you don't have hand blender). After blending add rest of ingredients and bring to boil and simmer around 15 minutes. Add more water if too thick. Enjoy--Only 1 point for a 2 cup serving! Makes 12 servings.


    Special Notes
    This soup has saved me many a days when my points have run out! It tastes best if you let it cool and absorb the flavors. It is hearty and chunky and I have been eating it for years. You can add light red kidney beans and or pasta to it for minimal point increases.
