    1 large butternut squash (about 1-1/4 pounds), peeled, seeded, and cut into chunks
    7 or 8 carrots (about 1 pound), cut into chunks
    3 or 4 medium zucchini (about 1 lb.), cut into chunks
    2 large potatoes, peeled and cut into chunks
    2 large onions, cut into chunks
    3 to 4 ounces green beans (about 1 cup)
    2 or 3 cloves garlic
    2 teaspoons salt
    2 teaspoons dried Italian seasoning, crushed (optional)
    1/2 to 3/4 teaspoon pepper
    6 cups water

    In large pot combine squash, carrots, zucchini, potatoes, onions, green beans, garlic, salt, Italian seasoning (if desired), and pepper. Add water. Bring to boiling; reduce heat. Cover and simmer about 40 minutes or until vegetables are very tender. Cool slightly. Drain off 1 cup of the cooking liquid; set aside. Keep the remaining cooking liquid with the vegetables. Place a portion of the vegetable mixture at a time in a blender container or food processor bowl. Cover and blend or process until smooth. Stir in part or all of the reserved cooking liquid to reach the consistency you like.

    Makes 8 side-dish servings.
