    1 tablespoon stick margarine
    1 1/2 med onions, minced
    1 garlic clove, minced
    2 oz 1/4 cup dry white wine
    2 cups canned whole Italian tomatoes(no salt added) pureed
    1 cup canned tomato puree (no salt added)
    1 teaspoon granulated sugar
    1/4 teaspoon salt
    Pinch freshly ground black pepper or to taste
    1/2 cup nonfat sour cream
    2 tablespoons evaporated skimmed milk
    2 tablespoons minced fresh flat-leaf parsley
    1 tablespoon minced fresh basil or other herb
    2 oz cooked boneless lean ham, diced
    Fresh basil leaves to garnish

    In medium nonstick saucepan, melt margarine: add onions and garlic. Cook over medium heat, stirring frequently, 3-5 min, until onions are softened. Add wine to onion mixture: bring to boil. Reduce heate to low, simmer 5 minutes until liquid is evaporated. Add tomatoes, tomato puree, sugar, salt,pepper and 1/2 cup water to onion mixture, bring to a boil. Reduce heat to low, simmer, covered, stirring occasionally, 30 minutes until flavors are blended (do not scorch).

    Meanwhile, in small bowl, combine sour cream, milk, parsley and minced basil set aside Remove tomato mixture from heat, with wire whisk stir in all but 1 tablespoon plus 1 teaspoon of sour cream mixture. Add ham, stir to combine. Ladle soup into 4 bowls, top each portion with 1 teaspoon remaining sour cream mixture, Serve garnished with basil leaves.

    Serves 4.

    Serving (1 1/4 cups) provides: 3/4 fat, 2 1/2 vegetables, 1/2 protien, 40 Optional calories
