    Soup: 4 pt. Creamy Vegetable Soup

    List of Ingredients




    1 large onion chopped
    1/4 cup butter
    3 medium sweet potatoes peeled, chopped
    3 medium zucchini chopped
    1 bunch broccoli chopped
    2 quarts fat-free chicken broth or vegetable broth
    2 medium red potatoes shredded
    3 cloves garlic minced
    14 1/2 ounces corn cream-style, Del Monte, or 3/4 c fresh corn
    1 teaspoon celery seed
    1 teaspoon ground cumin
    2 teaspoons salt
    1 teaspoon pepper
    2 cups fat-free half and half

    Recipe



    Place all ingredients in a 4 to 5 quart crockpot except cream. Cook on the low setting 6 to 8 hours or until sweet potatoes are tender. Ten minutes before serving, add the cream, if using. Heat through and serve. Makes 8 servings.
