    Beef Pepper Steak

    List of Ingredients

    * 1 lb thin cut sirloin
    * 1 clove garlic, minced
    * 1 tbsp low-sodium soy sauce
    * 1/4 cup water
    * 1 cup green pepper, cut into 1 inch pieces
    * 1 cup chopped onion
    * 1/4 cup chopped celery
    * 2 tbsp cornstarch
    * 2 cups water
    * 1 tomato, cut in wedges
    * 3-4 cups cooked rice

    Recipe

    Brown beef in skillet; add garlic and cook until the garlic is yellow. Add soy sauce and 1/4 cup water; cover and cook 45 minutes. Add all vegetables except tomatoes; cook for 10 minutes. Blend cornstarch** with 2 cups water and stir in. Add tomatoes and cook , without stirring, another 5 minutes. Serve over rice
