    "I adapted this from a cookbook that I've had for years. It's very tasty. (Great American Brand Name Recipes Cookbook)"

    List of Ingredients




    1 Cup chopped mushrooms
    10 oz Spinach, chopped
    1/2 cup chopped onion
    1 clove garlic, minced
    1 cup shredded carrots
    1/2 tsp dried basil leaves, crushed
    1/8 tsp pepper
    1 1/2 lbs steak, pounded 1/4 inch thickness
    14 oz chicken or beef broth (no salt added of course!)
    2 Tbsp dry red wine

    Recipe



    Combine 3 oz of the broth with onion, mushrooms, garlic and spinach and saute until vegetables are tender (approx 5 minutes). Drain, then add carrots, basil and pepper, mix well.

    Spread vegetable mixture over pounded steak within 1 inch of edges. Roll up from long end, jelly roll style and tuck in ends of steak into roll. Secure with wooden toothpicks or tie with cotton string. Place roll seam side down in baking dish

    Ina small bowl, take remaining broth and stir in red wine. Pour over steak roll. Cover with foil and pop into preheated oven.

    Spoon juices occassionally over meat and cook until meat is tender. Remove from oven and let stand covered for 10 minutes.

    350-375 degree oven for at least 30 minutes. Time will depend on cut of meat and your oven
