Salsa: Roasted Fresh Tomato Salsa

4 medium fresh tomatoes
1 medium bgreen bell pepper, halved and cored
1 medium onion, peeled and halved
2 whole cloves of garlic
1 jalepeno pepper, halved and seeded
1/4 cup minced fresh parsley
1 tablespoon lemon juice
1/2 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
Recipe
Preheat oven to 375 degrees. Place tomatoes, bell pepper, onion, garlic and jalapeno in a shallow baking dish and bake until vegetables are just tender, about 15 minutes. Remove from oven and allow to cool sufficiently to handle. Crush the tomatoes in a mixing bowl with the back of a large spoon. Chop the bell pepper and onion, and mince the garlic and jalapeno; add these to the tomatoes. Stir in the parsley, lemon juice, cumin, oregano and black pepper. Toss to mix well and serve at once.
