    Marinade: Jerk Chicken Marinade

    List of Ingredients

    2 tablespoons Ground allspice
    2 tablespoons Thyme
    1 tablespoon Black pepper
    1 teaspoon Ground ginger
    1 teaspoon Cayenne pepper
    1 1/2 teaspoons Nutmeg
    1 1/2 teaspoons Cinnamon
    2 1/2 tablespoons Granulated garlic
    1 teaspoon Splenda
    1 Tablespoon Garlic cloves, minced
    1 Cup Yellow onion, diced fine
    1/2 Cup Scallion, diced fine
    1 Each Scotch bonnet chili, minced fine
    1 3/4 Cups White vinegar
    1/2 Cup Lime juice, fresh

    Recipe

    Combine all ingredients and mix thoroughly. Marinate chicken overnight, reserving some of the marinade for basting. Grill slowly over a smoky hardwood fire. Baste chicken as it cooks with some of the marinade.
