    List of Ingredients




    1/4 cup finely chopped onions
    1/4 cup finely chopped mushrooms
    1/4 cup finely chopped celery
    1/4 cup finely chopped carrots
    1 small clove garlic, minced
    1 ounce skinless boneless chicken breast finely diced
    1/3 cup rice or oat flour
    30 ounces low salt chicken broth
    pinch dried thyme
    pinch dried rosemary, crumbled
    pinch dried sage
    ground black pepper

    Coat a large nonstick saucepan with nonstick spray. Add the onions, mushrooms, celery, carrots and garlc. Cook over medium heat, stirring constantly, for 5 minutes. Add the chiken. Cook, stirring, for 1-2 minutes or until the chicken is non longer pink. Remove the chicken and veggies; set aside.

    Add the flour to the pan. Cook over medium heat, stirring, for 5 minutes, or until light tan in color. Remove from theheat and gradually whisk in the broth until smooth. Add the thyme, rosemary and sage. Cook over medium heat, whisking constantly, for 2-3 minutes or until thick. Add the reserved chicken and vegetables. reduce the heat to low; simmer for 5 minutes, or until the vegetables are hot. Season with pepper to taste.
