List of Ingredients
1 dried chipotle pepper (wear plastic gloves when handling)
1 onion, finely chopped
1 large clove garlic, minced
1 teaspoon cocoa powder
1 cup low salt chicken broth
8 ounces tomato sauce
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon sugar
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
2 teaspoons fresh squeezed lime juice Recipe
Place the pepper in a small bowl and add hot water to cover. Set aside for 30 minutes, or until softened. Drain. Split the pepper and discard the seeds, membranes and stem. Chop the pepper finely and set aside.
Coat a large no stick saucepan with nonstick spray. Add the onions, garlic and cocoa. Mist with nonstick spray. Cook over medium heat, stirring, for 8 minutes, or untilt he onions are softened. Add the reserved peppers. cook, stirring, for 2 minutes. Add the stock, tomato sauce, chili powder, cumin, sugar, allspice and cinnamon. Stir well to combine. Reduce the heat to low. Cook for 15 minutes, or until thickened. Add the lime juice and stir well.
