    White vinegar
    Fresh Cut Sage
    Sterilized Bottles

    Sterilize bottles in the dishwasher right before filling. While bottles are cooling a bit, wash sage and pick out some pretty leaves and stems. Push them into the bottles so they look pretty. Bring vinegar to a boil, let set for a few minutes so as not to burn yourself. Using a funnel, fill the bottles with the warm vinegar.

    Cover and let the sage marinate in the vinegar at least 1 week before using. The longer it sets, the milder the vinegar becomes and the more flavorful it becomes also. Use as you would any vinegar. Especially good as salad dressings!

    Variations:
    Add fresh green onions or scallons, trimmed and washed to bottles with sage. Add vinegar

    Add fresh peeled garlic clove (make sure to pierce clove first) to bottles with sage. Add vinegar.
