    Baked Ginger Pineapple

    1 fresh pineapple topped, quartered, core removed
    4 tablespoons finely chopped crystallized ginger (off plan)

    Recipe



    1. Preheat the oven to 350° F (180° C).

    2. Run a knife blade between the flesh and skin of each pineapple quarter, leaving the flesh sitting on the skin. Slice the flesh crosswise at about 1/2 inch (1.25cm) intervals, then make one cut lengthwise from end to end. This will leave you with bite size chunks.

    3. Sprinkle the crystallized ginger over the top. Place in a glass baking dish and bake in the preheated oven for 20 minutes or until heated through. Serve warm.
