    Apple Brown Betty

    1 cup apples, peeled, cored, and sliced (about 2 small, or one large apple)
    1/2 c. oat flour
    2 tsp. brown sugar substitute
    1 egg white
    cinnamon
    nutmeg
    lemon juice

    Recipe

    I used 2 disposable foil "tart tins". Place apples in tins and sprinkle with lemon juice. In separate bowl, combine flour, egg white, brown sugar substitute, and spices. Mix together until it forms in little crumbly balls-- looks kind of like granola or grape nuts. Pour mixture over apples. Bake in 375 degree oven for 35 minutes.

    "This was quite tasty and satisfying (I only ate one and it seemed like a lot). However, the apples were not as moist and juicy as I would have liked. If I were making real Apple Brown Betty, it would include butter in the flour mixture, and I think that helps to keep it moist. Next time I make this, I think I will sprinkle some cinnamon and nutmeg on the apples too, and wrap the whole thing up in foil to keep the juice in. I dunno what effect that will have on the the crispy topping, though. "
