Buny's Strawberry Custard

List of Ingredients

1 whole egg
1 egg white
1/2 teaspoon vanilla
2 teaspoons pourable splenda
1/3 teaspoon baking powder
1/2 cup strawberries (or other fruit)


Recipe

Pour strawberries into microwave safe container; cook on high for 30-60 seconds and then mash well with a fork. Beat eggs with other ingredients except for fruit until very well blended. Stir in fruit and mix well. Pour into microwave safe bowl and cook for 2 min on high.

I've also made this with plan friendly cranberry sauce as the fruit, and also with cinnamon spice diced peaches.
