    Pineapple & Cucumber Salad

    List of Ingredients

    1 cucumber
    1/2 whole fresh pineapple
    1 red onion
    1 bunch wwatercress
    1/4 cup lemon juice
    2 tablespoons low sodium soy sauce
    1 tablespoon pourable splenda (or 2 packets)
    1/4 teaspoon dried chili flakes
    2 tablespoons chopped fresh mint

    Recipe

    Cut cucumber lengthwise in quarters and remove seeds. Slice each quarter into 1/4" slices. Peel pineapple and cut into quarters. Remove core. Cut each quarter in half and slice into 1/2" slices. Cut red onion in half and thinly slice each half. Remoe thick stalks from watercress and reserve leaves. Combine cucumber, pineapple, onion and watercress leaves in a bowl. In another bowl, combine remaining ingredietns and pour over salad, tossing well. Makes 4 portions (1/2 cup fruit A)
