    · (1 serving) fruit (berries, banana, or any combination you like!)
    · 2 egg whites (don’t forget the water if using powdered!)
    · sweetener to taste (about 1 tsp)
    · cinnamon to taste (about ¼ tsp)

    Recipe



    Blend fruits in a blender. Add egg whites (and water) and blend with fruit thoroughly but not too long. Pour mixture into a non-stick skillet on low heat and “scramble” with a heat-resistant rubber spatula for about 5 minutes. It will probably get fluffy – this is okay, it will settle a bit when you leave it to cool (you can also eat it warm if you like).

    This can easily be doubled, tripled, quadrupled (you get the idea) and refrigerated for at least a week. I love it for breakfast or mm snack. Adding banana gives it a somewhat smoother texture and flavor.
