    Beans: Beans in Wine

    adapted from Bean Feast by Valerie Turvey

    List of Ingredients

    1 1/2 cups red beans soaked overnight (for plan friendly, use pinto beans)
    sauteeing liquid
    2 cloves garlic chopped
    1 red pepper sliced
    1 cup red wine
    1 tbsp tomato paste (no salt added)
    1 bay leaf
    pepper to taste

    Recipe

    Cook beans in unsalted water until just tender. Drain. Preheat oven to 350ºF. Saute onion, garlic and pepper until soft. Add beans, wine, tomato paste, and bay leaf; season with pepper. Transfer to casserole and bake 45 minutes.
