    oatmeal flour (1 cup oatmeal ground in blender)
    1 c Splenda
    1 tsp baking powder
    1 tsp anise powder (grind anise star in coffee grinder)
    or 1 tsp anise seed
    4 large egg whites
    1 t vanilla extract
    1 tsp grated lemon rind
    1 tsp almond extract

    Recipe



    Mix first 4 ingredients in large bowl. Whisk eggs and extracts in 2 cup measure, stir in lemon rind. Add to dry ingredients and beat until dough clumps together. Form into a 12 " log. Bake at 325 F for 35 - 40 mins until golden. Cool completely on rack.

    Using a serrated knife cut each log diagonally into 1/2" slices. Place cut side down on baking sheet and bake at 325 F for 15 mins. Turn over and continue baking until cookies are a deep golden color, about 5 mins. Cool on rack.

    Makes about 20 biscotti cookies/2 pre-workout servings.
