    From member destinygrace: It's a little twist on Vicki Blair's muffin recipe. I needed to feel like I was having cake on my birthday...

    List of Ingredients




    Cup Cakes:
    8 egg whites
    1 tsp cream of tartar
    1 cup oat flour
    12 to 14 pkts Splenda
    2 heaping tbsp applesauce
    1 tsp baking powder
    1 tsp baking soda
    1 tsp vanilla

    Topping:
    1 cup banana (smashed)
    dash of nutmeg
    dash of cinnamon

    OR

    1 cup berries
    1-3 Splenda pkts

    Recipe



    Beat egg whites with cream of tartar until stiff. Add remaining ingredients except Topping ingredients. Spoon into 16 cupcake papers in muffin pan. Let set 5 minutes to thicken. Bake at 350° for 20 to 25 minutes or until light brown. Let cool completely. Remove paper from cakes arrange 3 cakes on dish. Use 1/4 cup topping to "frost".

    For banana topping, mix and spread 1/4 cup on cakes. For other fruits such as blueberries, raspberries, etc. sprinkle berries with Splenda. Place in non-stick saucepan. Heat to low boil then drizzle 1/4 cup berries on top.
