    Desserts: Ginger & Spice Peach Cobbler

    Recipe Introduction

    Note: best used for living lean, since some ingredients may stall your weight loss, including the oat flour, etc.

    List of Ingredients

    FOR FRUIT FILLING

    2 C PITTED, PEELED, SLICED PEACHES
    1/4 C BROWN SUGAR TWIN
    1/2 TSP ARROWROOT
    1 T LEMON JUICE
    1 T FINELY CHOPPED GINGER
    1 T GROUND ALLSPICE

    FOR BISCUIT TOPPING

    1 1/2 C OAT FLOUR
    3/4 TSP BAKING POWDER
    1/2 TSP BAKING SODA
    1 1/2 T CREAM OF TARTAR
    2 EGGWHITES
    POWDERED EGGWHITES TO EQUAL 2 EGGWHITES
    WARM WATER
    2 TSP BROWN SUGAR TWIN
    1/2 TSP CINNAMON
    1/2 TSP ALLSPICE

    Recipe

    Preheat oven to 400º and line bottom of an 8-in square baking pan with wax paper.

    (FILLING)In a bowl stir together brown sugar twin and arrowroot, then stir in peaches, lemon juice, ginger and allspice until combined well. Transfer peach mixture to pan.

    (BISCUIT TOPPING)Mix flour, baking powder, baking soda and cream of tartar, then add eggewhites and mix and set aside. In a small cup mix together powdered eggwhites and water: follow instuctions on side of can, then add to flour mixture and mix well. Add water, a little at a time until of sticky biscuit dough consistency. Drop topping evenly over peaches. In a small cup, stir together rest of brown sugar twin, cinnamon, and allspice and sprinkle over dough.

    Bake cobbler on middle rack 20 to 25 minutes, or until top is just past golden.

    Makes 2 servings: 1 C FRUIT A, 3/4 C CARB B, 2 OZ PROTEIN A

    This recipe is the closest I have found to actual peach cobbler...and it has ALLSPICE in it!!

    This is one of the best pre-workout meals for us type A's...all I add is a liter of water and I'm set!!
