    Desserts: Gingersnaps

    Recipe Introduction

    note: recommended for living lean rather than for weight reduction phase due to some off plan ingredients, such as the processed oat flour, splenda and brown sugar twin.

    List of Ingredients

    2 cups Oat flour
    1/4 C non sweetened applesauce
    1/2 cup granular Splenda
    2 Tablespoons Brown Sugar Twin
    2 teaspoons water
    1 teaspoon sugar free vanilla extract
    1 1/2 teaspoon ground ginger
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1/4 teaspoon ground cloves
    1/2 teaspoon salt

    Recipe

    Preheat oven to 300°F. Mix applesauce with Splenda and Brown Sugar Twin in a large bowl. Add water and spices and mix well. Gradually add oat flour and mix to a stiff dough. Form into small balls and place on greased cookie sheet at least 1" apart.

    Bake at 300°F for 20 minutes. After five minutes in oven, press cookies down with a fork in a criss-cross manner (not necessary. If you don’t press them they will come out looking like the ones you buy in the box). Continue baking, being careful not to burn and adjusting time for your oven. Makes 20-24 cookies.


    Molasses substitute: (makes 1 cup worth)
    3/4 of sugar Plus 2 teaspoons baking powder (increase liquid called for in recipe by 5 tablespoons and decrease baking soda by 1/2 teaspoon)
    OR * 3/4 cup sugar plus 1 1/4 teaspoons cream of tartar (increase liquid called for in recipe by 5 tablespoons)
