    2 egg whites
    1/2 lemon lime sparkling water or diet rite
    1/8 t. baking powder
    1/2 c rice flour
    1/8 t. flaxseed flour (optional)

    Recipe



    Beat the egg whites untill foamy and add the soda. Beat in the baking powder, rice flour and flaxseed flour. DON'T PANIC It WILL be thin.

    Heat a good non-stick 10" pan to med. high. Pour a scant 1/4 cup of batter into pan, swirl to make a very thin "pancake" cook until the edges begin to curl up.

    Turn over to cook other side. (I used my fingers, 'cause it's easier.) Cook for a few min, then turn over again. Do NOT cook until browned. Place on a plate w/ paper towel, top with another, and repeat.

    These stay soft and pliable; I used the lemon lime flavored water 'cause that's what I had--I'm sure that's why there was a slightly sweet taste to them. I'm sure plain would work well.
