    Baby Potato w/ Parsley & Lemon

    List of Ingredients

    * 3 lbs mixed baby red or white skinned potatoes
    * 1 tbsp water or optional extra virgin olive oil**
    * 6 tbsp chopped fresh parsley
    * 1 tbsp grated lemon peel
    * 1 tbsp fresh lemon juice
    * 1/2 tsp ground black pepper

    Recipe

    Cook potatoes in large pot of boiling water until tender, about 20 minutes. Drain and let stand at room temperature. Heat 1 tbsp water or optional olive oil** over medium-high heat. Add potatoes, 4 tbsp parsley, lemon peel, lemon juice, and pepper. Cook until potatoes are heated through, about 5 minutes. Transfer to a bowl and sprinkle with remaining 2 tbsp parsley. Serve.
