Caribbean Yam Bake

List of Ingredients

3 cups cooked, mashed yams (2 lbs)
2 egg whites
1/2 cup brown sugar Sugar Twin
1/2 tsp Butter Extract
2 T dark rum (optional)
1/2 tsp. ground nutmeg
1/2 tsp. poppy seeds
1/2 tsp. cinnamon
Zest and juice from 1 lime
2 bananas, peeled, diced


Recipe

1. In large bowl, combine first 9 ingredients until thoroughly mixed.

2. Fold in diced bananas.

3. Turn into shallow, greased 5-cup baking dish.

4. Bake in a 375-degree oven for 40 minutes.
