    Chipotle Mashed Potatoes

    List of Ingredients

    4 pounds yellow-fleshed potatoes such as Yukon Gold
    1 - 2 cups Sodium free (or low sodium) Chicken or Vegetable broth ( for Vegetarians)
    1/2 tablespoon canned chipotle chiles in adobo, diced (or to taste)
    1/2 cup packed fresh cilantro sprigs

    Recipe

    In a kettle combine potatoes with enough cold water to cover by 2 inches and boil potatoes until very tender, about 30 minutes. Drain potatoes in a colander, and, when just cool enough to handle, peel potatoes. Return warm potatoes to kettle and with a potato masher or ricer mash potatoes. Add broth...may need more...add to correct consistance.

    Add chiles and mash into potatoes. Add fresh ground pepper to taste. Stir in Chopped Cilantro. Serve hot.

    Or Potatoes may be made up to this point 1 day ahead and chilled, covered. Reheat potatoes, covered, in a 350°F. oven about 30 minutes.
