    Potato Salad

    List of Ingredients

    * 1/2 cup cooked diced potato
    * 2 tsp tarragon vinegar
    * 2 tbsp chopped celery or to taste
    * 1 tbsp low/no sodium chicken broth or to taste
    * 1 tsp fresh chopped parsley
    * 1-2 green onions, chopped
    * dash dry mustard to taste
    * 1 boiled egg white

    Recipe

    Mash egg white, add remaining ingredients. Mix together and refrigerate until ready to eat.
