    Sherried Sweet Potatoes w/ Apple & Onion

    List of Ingredients




    3 sweet potatoes, diced
    1 apple, cored, peeled and diced
    1/2 tablespoon ground cinnamon
    1/2 teaspoon ground tarragon leaves
    1/2 teaspoon ground coriander
    3 tablespoons nonfat sour cream (off plan ingred, may slow weight loss)
    2 tablespoons finely chopped scallions
    2 tablespoons dry sherry
    2 tablespoons chopped fresh parsley

    Recipe



    Bring a large saucepan of water to a boil. Add sweet potatoes and cook for 23 minutes. Add applea nd keep cooking at a boil until potatoes are tender. Drain sweet potatoes and apples. Return to saucepan and palce over moderate heat. Tos with alarge spoon until all moisture is gone. Remove saucepan from heat. Add cinnamon, tarragon, coriander and sour cream. Mash. Stir in scallions, dry sherry and parsley. Reheat over gentle heat.

    Variations: The potato-apple mixture can be placed in a baking dish rather than where you "reheat over gentle heat", and baked at 400 degrees for 20 minutes.
    Use white potatoes or yams, or a combination of all three instead of just sweet potatoes.
