    Baked Stuffed Zucchini

    List of Ingredients




    1 Zucchini (1 – 2” thick)
    ½ C. Celery
    4 oz. Chicken/Turkey Burger
    ¼ C. Chopped Onion
    2 Cloves Minced Garlic
    1 C. Cooked Rice
    1 (8 oz) Can No-Salt Tomato Sauce
    Allspice (to taste)
    Pepper

    Recipe



    1. Cook zucchini in boiling water about 3 – 4 minutes.

    2. Cut zucchini in half lengthwise and scoop out pulp (reserve pulp).

    3. Sprinkle with pepper.

    4. Cook onion, garlic, celery and meat until lightly browned.

    5. Add rice, reserved pulp, and tomato sauce.

    6. Stuff mixture back into zucchini, place in shallow baking pan.

    7. Bake at 375 for 30 minutes or until tender.

    Makes 2 servings
