    Chicken: Adult Chicken Stew

    List of Ingredients

    * thawed chicken breast
    * Marsala cooking wine
    * port wine
    * grape tomatoes
    * vegetable broth
    * chopped onion
    * minced garlic
    * thinly sliced celery
    * thinly sliced carrots
    * 1/2 cup canned no-salt added potatoes (per serving made)
    * frozen green beans (or canned green or yellow beans)

    Recipe

    Put chicken in a plastic dish and just cover with equal parts of Marsala and port wines. Let marinade overnight or for several hours in the refrigerator. Remove from marinade and grill on George Foreman grill. Measure your allotted serving size for each serving of stew you prepare; then shred chicken, set aside.

    Put grape tomatoes in a glass measuring cup and pour in port wine to let the tomatoes soak. set aside. Using vegetable broth, simmer onion, garlic, and celery until cooked. Add sliced carrots , 1/2 cup canned potato per serving and green or yellow beans. When beans are cooked, add chicken and tomatoes (including port wine). Simmer as long as you like. Divide into portions.
