    Chicken: Brenda's Italian Chicken

    List of Ingredients




    Place 4-6 chicken breasts in your crockpot.
    Add the following ingredients:
    1 can NSA (no sodium added) diced tomatoes
    1 can NSZ tomato sauce
    1/2-3/4 cup diced onion (sweet or yellow onion is best)
    2 cloves minced garlic
    2 tsp. Italian Seasonings
    1 tsp garlic powder
    1/2 tsp red pepper flakes
    Fresh Ground Pepper to taste

    Move the chicken around through the sauce so that all pieces are coated.

    Turn crock pot on low, cover and cook all night or all day (about 8+ hours)

    This will make the most wonderful tomato broth, which is a free food. Cut off out chunks of the chicken to equal your required protein amount. Serve over your choice of rice. Spoon out as much of the broth as you would like. It is SOOO yummy and the chicken is so tender. It keeps well in the fridge for as long as 7-10 days. I often double the recipe. Even my tall skinny hubby LOVES this comfort food. It's like eating a gumbo.
