    Chicken: Chicken, Mushroom & Asparagus Risotto

    List of Ingredients

    2 oz raw chicken breast, sliced
    1/4 cup Arborio Mediterranean Rice/Risotto
    1-1/2 cups raw mushrooms, chopped
    1/8 cup shallots or onions, chopped
    splash white wine
    splash lemon juice
    low-sodium chicken broth
    water
    1 cup asparagus
    fresh parsley

    Recipe

    Pan fry chicken and mushrooms in a good non-stick skillet, remove and set aside. Pan fry onion. Add rice and cook 2 minutes, stirring occasionally. Add dash or two of wine and stir until absorbed. Add dash or two of lemon juice and stir until absorbed.

    Add stock and water alternately, bit-by-bit until absorbed. Continue until rice is tender, about 25-30 minutes. Stir in chicken, mushrooms, asparagus, and parsley. Season to taste.
