    (this can also be made using venison or beef)

    List of Ingredients




    4 cups low-sodium chicken broth (canned or you can make your own)
    1 lb chicken breast, cut into 1/2-inch cubes
    3 garlic cloves, chopped
    2 cinnamon sticks
    4 star anise
    1 tsp splenda (any sugar sub)
    1/2 cup fresh beansprouts
    1 spring onion/scallion, finely chopped
    fresh coriander leaves/cilantro, roughly chopped, to garnish

    Recipe



    Put the stock into a large saucepan. Add the chicken, garlic, cinnamon, star anise, & splenda. Bring to a boil and simmer for 30 minutes. Skim off the top occasionally if needed.
    In the meantime, put the beansprouts into a serving bowl. Pour the hot soup over the beansprouts, garnish with chopped spring onion and serve.
