    Chicken: Chicken & Brown Rice Pilaf

    List of Ingredients

    4 chicken breast halves
    1 can chicken broth
    1/2 cup water
    1 bag of snow peas stir-fry mix
    2 cups minute brown rice, uncooked

    Recipe

    Brown chicken in skillet with 1 tbsp broth. Remove chicken. Add remaining broth and water, stir and bring to a boil. Add stir-fry vegetables and rice. Top with chicken, cover and cook on low heat for 5 minutes or until chicken is cooked through and rice is tender. Let stand 5 minutes.

    This is the recipe I have been using and tweaked from the Minute Rice box ----

    1 Tbsp vegetable oil (I use water)
    4 bonelss chicken breast halves
    1 can condensed chicken broth
    1/2 cup water
    1 cup mushrooms (I add more)
    1 small onion, chopped
    1 cup frozen peas (again I add more)
    2 cups Minute Brown Rice, uncooked

    Brown chicken in skillet with 1 tbsp water. Remove chicken. Add broth and water, stir and bring to a boil. Add vegetables and rice. Top with chicken, cover and cook on low heat for 5 minutes or until chicken is cooked through and rice is tender. Let stand 5 minutes. I sometimes add green onions.
