    Chicken: Chicken & Rice for One

    List of Ingredients

    1-med to large, tomato (skin and seeds removed)
    1/2 tsp basil and/or Italian seasoning (I added both)
    1/4 cup chopped onion
    1/2 cup cooked rice
    2 oz cooked chicken or turkey breast

    Recipe

    Cook tomato with basil, chopped onion and about 1/2 cup water. Simmer over low heat until cooked. Add 1/2 cup cooked rice and 2 oz cooked chicken or turkey. Heat through until hot.
